Whether you’re looking for a snack, an appetizer, a side dish or a light meal, these grilled potatoes recipes will satisfy your hunger!
Grilled Sweet Potato Rounds With Gorgonzola Dip
What you need:
- 4 large sweet potatoes, scrubbed and pierced
- 1 cup crumbled Gorgonzola cheese
- 1/2 cup mayonnaise
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 cup black pepper
- Minced chives
In a small bowl, mix the cheese, mayonnaise and olive oil and stir to combine. Refrigerate until serving. Place sweet potatoes in a microwave-safe plate and heat in the microwave (on high, uncovered) for 8 minutes, turning once. Allow to cool for a couple of minutes then slice into 1/2-inch rounds.
Brush both sides with oil then season with salt and pepper. Cook, covered, on a pre-heated grill over medium heat for 5 minutes or until browned. Transfer to serving plate, sprinkle with chives and serve with Gorgonzola dip.
Three-Cheese Grilled Potatoes
What you need:
- 6 large potatoes, sliced into 1/4-inch thick rounds
- 1/2 kg. sliced bacon, cooked and crumbled
- 2 medium onions, chopped
- 1 cup shredded sharp cheddar cheese, divided
- 1 cup shredded part-skim mozzarella cheese, divided
- 1/3 cup grated Parmesan cheese
- 1/4 cup butter, cubed
- 1 tablespoon minced chives
- 2 teaspoons seasoned salt
- 1/2 teaspoon pepper
Prepare 2 18-inch squared of heavy duty aluminum foil. Coat each with cooking spray. Divide potatoes and onions into the two foils. In a bowl, combine Parmesan cheese, 3/4 cup each of the sharp and mozzarella cheese. Divide among the two foils then top each with bacon, butter, chives, salt and pepper.
Fold over the foil to create a packet. Cook on a pre-heated grill over medium-high heat until potatoes are tender and cooked through, about 35-40 minutes. When ready, remove from heat and carefully open the packets. Sprinkle with remaining sharp and mozzarella cheeses and allow to cool for a few minutes before serving.
